The taste of aromatic laksa leaves lingers after every mouthful of spaghetti.
Prawns (De-vein. Marinated with salt, pepper & garlic powder)
Laksa Paste (I’ve used Dancing Chef, available from NTUC)
Laksa Leaves (chop finely)
Directions (Good for 1-2 pax)
1. Boil Spaghetti as directed till al dente. Drain.
2. Heat olive oil in a pan. Add in minced garlic and finely chopped laksa leaves. Fry till fragrant.
3. Add prawns into pan.
4. Add spaghetti.
5. Mix sauce in bowl before adding into spaghetti.
a) for non spicy version, add pesto sauce with 2tbsp “spaghetti water”
b) for spicy version, mix 1/2 tbsp laksa paste, 2 tbsp pesto sauce with 2 tbsp of “spaghetti water”
c) for lemak version, mix 1/2 tbsp laksa paste, 2 tbsp pesto sauce with 2 tbsp of milk
6. Toss well then serve.
Garnish with finely chopped Laksa leaves & Paprika Powder.
Goes really well with a glass of cold white wine or fizzy soda!
