Laksa Prawn Aglio Olio in 6 Easy Steps

The taste of aromatic laksa leaves lingers after every mouthful of spaghetti.

Prawns (De-vein. Marinated with salt, pepper & garlic powder)
Laksa Paste (I’ve used Dancing Chef, available from NTUC)
Olive Oil
Garlic (minced)
Laksa Leaves (chop finely)

Directions (Good for 1-2 pax)
1. Boil Spaghetti as directed till al dente. Drain.
2. Heat olive oil in a pan. Add in minced garlic and finely chopped laksa leaves. Fry till fragrant.
3. Add prawns into pan.
4. Add spaghetti.
5. Mix sauce in bowl before adding into spaghetti.
a) for non spicy version, add pesto sauce with 2tbsp “spaghetti water”
b) for spicy version, mix 1/2 tbsp laksa paste, 2 tbsp pesto sauce with 2 tbsp of “spaghetti water”
c) for lemak version, mix 1/2 tbsp laksa paste, 2 tbsp pesto sauce with 2 tbsp of milk

6. Toss well then serve.

Garnish with finely chopped Laksa leaves & Paprika Powder.
Goes really well with a glass of cold white wine or fizzy soda!

Simple tips to Perfectly Steamed Fish.

My mother in law is an incredible home cook! She is 85 and still cooking for the family. I was flattered when she said she loved my steam fish, and has even asked me for my recipe.

Sharing a couple of simple tips to perfectly steamed fish. It’s not difficult, and I promise even the kitchen noob will emerge victoriously with perfectly steamed fish.

Perfectly steamed soy sauce fish with lee kum kee seafood soy sauceFish (I’ve used threadfin fish.)
Ginger (sliced, Sliced and finely shredded)
Garlic (minced)
Spring Onion
Sesame Oil
Salt and pepper to taste
Lee Kum Kee Seafood Soy Sauce

1. Rub a bit of salt on fish.
2. Lay some spring onion on a plate, place fish on top, then lay sliced ginger on top. (Placing spring onion under the fish allows fish to cook evenly and helps shorten the cooking time too.)

3. Wait for steamer to come to boil before putting fish in.
4. Steam for 5 minutes. (Short cooking time because I was steaming a fish fillet)
5. Turn off heat. Let fish cook in residual heat for another 2-5 minutes.
6. Heat sesame oil in a wok. Fry shredded ginger and minced garlic till fragrant. Remove.
7. Pour in Lee Kum Kee Seafood Soy Sauce and heat it up with residual heat from wok.
8. Remove fish from steamer. Discard “sauce” from fish.
9. Remove spring onion and ginger from fish.
10. Pour Lee Kum Kee Seafood soy sauce over fish. Top with fragrant ginger & mince garlic in sesame oil. Garnish with spring onions.

Lee Kum Kee Seafood Soy Sauce is easily available in supermarkets.

Alternatively, you can make your own sauce for the steam fish too. Simply heat up 2 tbsp dark soy sauce, 1/2 tsp sugar, 3 tbsp water and pepper in a pot. Make sure the sugar is well dissolve and your homemade sauce is ready to be used.

1. This one is a no brainer. Use really fresh fish.
2. Cut slant slits on fish body if it is too big. This helps cut on cooking time.
3. Always wait for water in the steamer to boil before putting fish in to steam.
4. Add sufficient water for steaming right from the start.
5. Time control is important when steaming fish. It takes about 12 minutes to cook a 450g fish. Learn to adjust your timing accordingly.

Macaroni, Prawns, Squid, Mussels, tomato based pasta sauce, frozen mixed vegetable, minced garlic, olive oil, Grated mozzarella cheese, MasterFoods Italian herbs, salt & pepper to taste.

1. Boil water in pot, add olive oil, salt and a dash of MasterFoods Italian herbs. When water comes to a rolling boil, put in macaroni and cook as directed. Drain macaroni when done.

2. Heat olive oil in frying pan.
3. Add in mince garlic and dash of MasterFoods Italian herbs. Saute garlic till fragrant.
4. Add Squid, then prawns, then macaroni and finally frozen vegetables.
5. Add in tomato based pasta sauce.
6. Add salt & pepper to taste

7. Dish up then plate macaroni into individual casserole.

8. Top up casserole generously with mozzarella cheese and “stick” in mussels.
9. Broil in the oven at 220 degrees for 3-5mins. (Watch closely!)
10. Garnish with a dash of MasterFoods Italian herbs. Serve immediately.

300g Pork Ribs(排骨)
2 Apple(苹果)peeled and cored, cut to large chunks
2 Honey Dates(金丝蜜枣)
4 Crystal Figs(无花果)
1 big White Fungus (白木耳)
a small handful of Mixed Apricot Seed (南北杏)
1.5l Water
Salt to taste

1. Soak White Fungus in water till soft.
Trim away hard bottom and break into smaller chunks and set aside.

2. Blanch pork ribs in boiling water for a few minutes
to get rid of the blood and impurities. Rinse in cold water.
3. In a medium pot add water, pork ribs, apples, honey dates,
crystal figs & mixed apricot seed. Cover pot.

4. Bring to slow boil for 1 and 1/2 hrs
5. Add white Fungus
6. Slow boil for another 30 mins. Add salt to taste.

Finally, dish up and slurp into nourishing goodness!

Japanese Sesame Seeds
Shredded Seaweed

1. Slice salmon to the width of 1.5cm each.
2. Marinate with Teriyaki sauce (got this sauce from NTUC)

3. Heat oil in wok. Pan fry salmon. Brown one side before flipping to the other side.
4. Dish up and serve on top of rice.
5. Drizzle more Teriyaki sauce if desired.
6. Sprinkle Japanese Sesame Seeds (got this Japanese Sesame Seeds from NUTC)

7. Garnished with shredded seaweeds.
